1 cup cold water
1 14-oz package of guava paste, cut into small (~1/2″) chunks
1 ripe mango, peel, remove seed, cut into chunks
1/3 cup apple cider vinegar
1 6-oz can tomato paste
1/4 cup fresh lemon juice
1 Tbs grated ginger root or galangal root
1 Tbs soy sauce
1 Tbs ketchup
1 Tbs Worcestershire sauce
Hot pepper to taste (I use Trinidad Spice Pepper which has the flavor of hot pepper without the heat).
salt and pepper to taste.
Simmer all ingredients in a pan over medium high heat. Reduce heat to medium-low and simmer 10-15 minutes, stirring as needed. Using an immersion blender, smooth out the chunks. It should be thick but pour-able. Thin with water if required.
